Homemade Allemande Sauce yaww~! Weekend PART 1

At night before, my mom and dad prepared sumthing bizzare for our dinner. It was so scrumptious and only made from ramlee chicken meat, onions, lettuce and so blablabla. See? My dad also can cook okay? He is wayyyy all-rounded and I WANT TO BE LIKE HIM!
3. Remove the roux aside, but left some on the pan. Add in chicken stock in small amount . work out the roux lumps with whisk. *don't put too much roux or else the veloute will become so thick. make sure the consistency is okay. adjust the consistency using little by little roux . put it aside once you are done ^^

Actually then, I'm not full enough so I decided to cook something for my family . :) I decided to cook Allemande sauce with croutons. Actually, only SOUPS have accompaniment but since we don't have fresh button mushrooms, I cancelled the first plan - CREAM OF MUSHROOM SOUP. originally homemade okay? bukan campbell tauu. So, I just made them Allemande sauce with croutons(fried bread)
So what did I actually do to cook? Come come,
Allemande Sauce
Ingredients
To make the chicken veloute
chicken stock
roux-butter & flour(same equal weight)
Onion
Garlic
sliced canned button mushroom
salt & pepper for seasoning
Techniques:
1. boil water. Add in chicken stocks to your desirable amount . *not too much because it may be too salty*
2. Get some flat pan. melt butter with slow gas. *it might burn your roux if its too hot.* then add in your flour. mix them together using whisk until no flour can be seen. Make a white roux ! don't cook too long or they will become brown roux.

4. Heat pan, put some fat(oil or butter) then saute onion and garlic until the fragrant smell come out. then saute the sliced button mushroom for 2,3 minutes . Add in veloute, adjust the consistency with cream if desire(if not thick enough) . maintain boiling point for several mins, season and then turn off da stove.
and, we are done! Boleh letak kat ats chicken chop jugak tauu . sangat sedap .yummy! But disebabkan kitorang takde chicken chop, so I just made croutons from sliced bread.
