Fall in Love with Butchery!

Assalamualaikum,

Annyong guys! lama lagi menyepi tapi takpe hari ni mood menulis myra dah smpai dahh. nak story pasal sebulan myra kat department butcher. fuhh sumpah memang awesome sangat! Nak tau x kenapa? mostly sebab sebelum ni kat kitchen kelas myra, bile masuk part butchery je mesti lelaki yang conquer. Mana taknya, yg girls ni takde confidence and x berani takut2 kalau rosakkan product. Thus, bila nak masuk department butcher ni myra totally excited!

Like seriously, byk sangat benda yg myra blajar bila dah masuk butcher ni. lagi2 abg mie ni dy mmg suka bagi tunjuk ajar kat student.

Antara yang myra belajar kat sini of cosh lah yg kena handle ayam, lamb, beef and seafoods lelain. Seronok tauu sebenarnya! but guys, this wasnt about those nice and pretty food yg slalu myra post tau. hari ni semua about raw materials ^^

Fillet Ikan Tenggiri


Moment yang ni lah paling myra ingat skali. 
Walaupun myra student culinary , bahagian butchery la paling myra tak confident skali nak buat. bercampur baur, sebab geli ade, sebab tak reti ade. hoho.
finally, kat sini myra blajar secare detail acaner nak fillet ikan tenggiri.

Bayangkan je lah ade skali uh, myra kena cabar dgn Sous Chef, Chef Wang. dy cabar suruh myra fillet ikan tenggiri about total of 60 kg dlm range mase yg limited. 
 dari pukul 9 pagi smpai pukul 11 pagi. fuh2, gilo2.


just imagine, kena fillet sesinki besar ikan tenggiri ni. sorang-sorang pulak tuh. Dekat nak pukul 11.20 uh, lagi 3 ekor jeee then myra terfillet tgn sendiri. choyyy (-.-) time tu pulak lah chef wang balik dri morning briefing. Ingatkan dy nak marah, sekali dy masuk, expression : terkejut

sebab lagi tinggal 3 ekor, he's got surprised and say " wuah, suda mau abes ka? cepatnya!" Lol, I were grinning like big grin especially he shows thumbs up to me. weehuu!

Chicken Run!

Boleh dikatakan hampir hari2 ni lah rutin kitorang kat butcher. potong ayam, paling banyak myra pernah potong adelah dalam 200 ekor ayam. Buat chicken cutting dulu, lepas tu bru chef myra ajar chop ayam. potong 12 ke, potong 16 ke. 


haa, ni lah namanya chicken cutting. 


ni pulak chicken trussing. ikatan ni just utk buat whole chicken roasted.


yeap, yang ni yelah chicken products from one whole chicken. termasuk lah chicken breast, chicken wing, chicken chop dan banyakkkk lagi. Abg mie ade cakap, poultry (chicken) ni mcm pokok kelapa. ada mcm2 kegunaannya.


Lamb

alright, my most favourite part is here! of course lah lamb, nak tau kenapa? dulu, myra memang teringin nak master clean lamb rack tapi xde konfiden. kat sini lah baru myra dpt peluang handle apa yg myra nak selama ni.

yg ni pulak handmade lamb meatball. myra yang bulat2kan ni sendiri tau. about 200 pcs. lawa tak? hewhew

Beef

yg ni pun seronok jugak, myra merasa lah dpt belajar serba sikit pasal beef ni. sebab.. abg mie rajin sgt bg kitorang kelas teori percuma! dah mcm masuk kelas balik dah. hihi. Abg mie berangan sekejap lah jadi lecturer a.k.a Sir Mie! lol XD Siap bagi handout bagai tauu. mana laa myra tak sayang nak tinggal butchery nehh.

This is Abg Mie. The only chef kat sana who call me with his daughter's name, 'Ya'. Funny isn't it?


antaranya, myra belajar parts2 beef, potong beef cube roll, slicing and lots more. myra jugak baru kenal  beef yang paling mahal coz ia sangat lembut that is Wagyu Beef/ Kobe Beef. harga dy boleh mencecah RM300 utk 1 kg! 1 kg je oke.

Faktor yang menyebabkan daging ni sgt lembut ialah sebab marbling of fat di celah2 daging tu. So bila daging ni dimasak, lemak tu akan cair and that what makes the meat tender :)
belum pernah rasa lagi, hopefully abg2 butcher baik hati masakkan wagyu beef utk myra.

Other than that, myra also berpeluang handle Seabass Fish (Ikan Siakap) yg mostly untuk function. Butterfly Seabass. Flower brown squid and so on..

Alright, thats all for today folks. Selesai sudah mencoret2 entry baru. myra share ni sebab nnty myra tak lupa ap yg myra belaja kat sini coz dah hbes nnty myra kena buat report.
